Ryan Cordon – Master Pastry Chef

Ryan brings world-class pastry skills and a creative edge to the No.5 kitchen. With years of experience in hotels & cafes, his precision, artistry, and obsession with perfection turn each bake into a masterpiece. From intricate bakes to signature blondies, Ryan’s work speaks for itself—elegant, indulgent, and always unforgettable.

Brendan & Joy Doyle – Owners

Joy and Brendan have spent over 25 years in hospitality, and it shows in every detail of No.5 Patisserie. They launched the bakery in 2025 with a shared dream: to serve handmade, high-quality treats that feel like home.

Joy brings the energy, warmth, and operations know-how, while Brendan blends baking with the tech to keep everything running smoothly. Together, they lead the team hands-on every day—experimenting with new flavours, engaging feedback from customers, and constantly dreaming up fresh, tasty ideas to bring to the market.

Danielle Byrne – E-commerce & Marketing Ninja

Danielle is the digital powerhouse behind No.5 Patisserie’s online presence. From building out our online shop to making sure your favourites are just a click away, she’s the reason our sweet treats can reach every corner of Ireland. Equal parts tech-savvy and customer-focused, Danielle ensures every online experience is smooth, simple, and sprinkled with love.
